THE SETUP

The Meat Trailer’s (“MT”) showcase piece of cooking equipment is a dual-deck Santa Maria grill that can feed an army. The general MT setup consists of modular tables, grills, and tents that can be configured in a variety of combinations, both indoors and outdoors. MT’s simple, somewhat crafty, furniture and fixtures are an extension of the aesthetic appeal that our restaurant in La Verne has become known for.

 

MENU FLEXIBILITY

Each menu is developed by taking into consideration our partner’s preferences, the hungry audience, and of course, our customers’ own pockets ($). With those general parameters in mind, our menus maintain a good degree of flexibility. This aspect is especially important for venues that we visit on a regular basis. We like to think that the creativity behind the food helps bring customers back to our partner’s place of business.

 

THE GRUB

Our food is a reflection of Chef Flood’s creativity and his dedication to procuring local, seasonal ingredients. Chef Flood continues to partner with small community farms such as the Constantine Family Orchard (San Dimas) to not only have access to a selection of the freshest produce, but also maintain a high quality product, (ie. Refraining from using pesticides).
